Enologo Per Amore was born in 2016, with the aim of giving life to the dream of the oenologist Giovanni Aiello who with this project wanted to encompass the energies of his territory: the Murgia of the Trulli and the Caves.
Thus was born the Chakra line with hand-painted labels, an expression of prestigious artisanal production. The name Chakra derives from the mystical part where the energies of earth, air and man merge to give harmonious unity.
In 2021 Giovanni finds a place to complete his dream: welcoming curious people and wine lovers and telling his love for the land and his most important fruit. Thus, on the hills of Putignano between the coast of Polignano a Mare and the Valle d’Itria, the Cantina Enologo per amore was born in the historic nineteenth-century structure of Gorgo di Fuoco which was formerly the Cantina Laterza. Together with Giovanni Aiello, the walls of this place return to breathing must air and welcoming wine enthusiasts.

Proposal #1
Wine Tasting Tour
This Tour is designed for those who are curious about the world of oenology and want to satisfy all their senses
his curiosity and his knowledge of the world of wine.
The Tour begins in the Fermentation Room, where it will be told how Giovanni Aiello’s dream came to be
transformed into the Chakra project and where the various production phases will be illustrated.
The Tour continues in the historical part of the winery, founded in 1800 by Don Guglielmo Laterza,
subsequently transformed into a restaurant and today with the acquisition of Giovanni Aiello it returns to the
its original functions, those of the cellar.
Entirely dug into the white Apulian stone of which the Itria Valley is rich, the winery develops
in depth, where walking through the different underground spaces of the cellar you will find: The corridor
of the prints where the Chakra labels are born. Le Bottaie: with its large barrels from the 19th century
transformed into welcoming and characteristic seats, where you can see our barriques being made
refinement.
It ends with the tasting of our wines, accompanied by an aperitif of excellent products
Apulian territory including:
Fried broad beans, toasted almonds and Leccine olives
Artisanal Apulian tarallini
Bari-style focaccia bread
Mozzarella, burrata and Caciocavallo aged in the wine pomace, at Km0
Friselline with cherry tomato and Aiello Extra Virgin Olive Oil
Capocollo from Martina Franca and Salami Pugliese

The Original Wine Experience
The tasting tour begins with a welcome glass in our hall.
We continue the tour of the cellar with a tasting of a glass directly from the barrels or tanks
refinement.
Afterwards we move to the Bottaia in front of the fireplace where a rich aperitif of excellence will be served
Apulian followed by a lunch consisting of typical dishes, a first and/or second course (depending on the season
and guests’ food preferences).
Including the tasting of 4 labels which will take place during the aperitif and lunch.

Aperitif
The sunset, the moment when the frenzy of the day calms down, the winery Enologo per Amore
offers a unique experience to end the day in the name of pleasure, which only a good
glass of wine with the right company they know how to offer, discovering our land.
The Aperivigna is a walk in the Chakra Rosato vineyard, immersed in the beauty of the Canale di
Pirro (Selva di Fasano). At the end of the walk, under a thousand-year-old oak the
Chakra tasting. Giovanni Aiello is leading the Aperivigna and will deliver with his passion
the unforgettable experience.
The aperitif consists of:
Almonds, broad beans and local olives
Artisanal Apulian tarallini
Bari-style focaccia bread
Mozzarella, ricotta and farmhouse cheeses
Friselline with tomato and extra virgin olive oil
Capocollo from Martina Franca and Salami Pugliese
